Want something that goes down nice and smooth? Guacamole is just the ticket. Although it's often eaten with tortilla chips, it can be spooned onto or into almost any savory Mexican dish. Lighten up your meal with a side that's not the pits.

- 3 avocados, peeled, pitted, and mashed
- 1 lime, juiced
- 1 tsp. salt
- 1/2 cup diced onion
- 3 tbsp. chopped fresh cilantro
- 2 roma tomatoes, diced
- 1 tsp. minced garlic
- 1 pinch ground cayenne pepper
- In a medium bowl, mash together the avocados, limejuice, and salt. Mix in onion, cilantro, tomatoes, and garlic. Stir in cayenne pepper. Refrigerate 1 hour for best flavor, or serve immediately.
