Simple Fried Plantains
This Mexican recipe that can be prepared as a side dish or a delicious dessert; overly ripe plantains work the best. It's versatile enough to serve at just about any meal.
At a glance
1 quart oil for frying
Preheat oil in a large, deep skillet over medium high heat. Peel the plantains and cut them in half. Slice the halves lengthwise into thin pieces. Fry the pieces until browned and tender. Drain excess oil on paper towels.
