Ramen Egg Drop Soup

1 15-oz can chicken broth 1.5 cups water 1 package Ramen noodles, no seasoning 2 large eggs, beaten or egg substitute equivalent 1 can spinach 1 tbsp. reduced-sodium soy sauce 2 tbsp. scallions, sliced
Bring broth and water to boil, add noodles and cook 3 minutes. Add eggs and cook 30 seconds; do not stir. Add spinach and simmer 1 minute. Add soy sauce and scallions; simmer 1 minute.
