Ramen Egg Drop Soup


For 2 people

  • 15 ounce(s) can chicken broth
  • 12 floz water
  • 1 package Ramen noodles, no seasoning
  • 2 large eggs, beaten or egg substitute equivalent
  • 10 3/4 ounce(s) can of spinach
  • 1 tablespoon(s) reduced sodium soy sauce
  • 2 tablespoon(s) scallions, sliced


Bring broth and water to boil, add noodles and cook 3 minutes. Add eggs and cook 30 seconds; do not stir. Add spinach and simmer 1 minute. Add soy sauce and scallions; simmer 1 minute.
