Quinoa with Spinach and Feta
Quinoa – pronounced KEEN-wa – is a healthful whole grain, high in fiber and vitamins. Use it as a rice substitute and try it in this hearty, nutritious dish.

Ingredients
    1/2 cup uncooked quinoa
    1 tsp. olive oil
    2 - 3 cloves garlic, chopped
    2 c. washed, chopped, fresh spinach
    1/3 c. light Feta cheese
Methods/steps
Wash and drain quinoa; add the quinoa and 1 cup cold water to pan, bring to boil, cover and cook until liquid is absorbed and quinoa is cooked, about 15 minutes. Meanwhile, gently heat a fry pan with the oil, add the garlic and gently cook; add the spinach to wilt. When quinoa is cooked, add to the fry pan, roughly crumble the feta and add to the pan. Gently mix everything together and serve.
