Plum Cake For 12

Visions of sugar plums will be dancing in your head when you taste this palate-pleasing cake. If you're not a big fan of plums, simply substitute apricots for the same effect with a twist on the taste.


Plum Cake For 12

Ingredients

For 12 people

  • 2 cup(s) flour, sifted
  • 1/2 teaspoon(s) salt
  • 1/2 teaspoon(s) baking powder
  • 2 teaspoon(s) sugar
  • 2/3 cup(s) butter
  • 2 egg yolks
  • 1/3 cup(s) water
  • 1 Breadcrumbs
  • 1 Topping:
  • 2 pound(s) plums
  • 1 cup(s) sugar
  • 2 egg yolks
  • 2 tablespoon(s) sugar
  • 2 tablespoon(s) cream

Directions

Sift dry ingredients for cake together. Cut in butter and well mixed, make a well in the center; add egg yolks and water and mix well. Turn out on a well-floured board and knead for a few minutes. Place in refrigerator to chill for one hour before using. When cold, roll dough into a thin sheet and cover bottom of 13 x 9 inch cake pan. Sprinkle with breadcrumbs and dot generously with butter. Mix the egg yolks, sugar and cream together and reserve. Wash plums, cut into halves and remove stones. Arrange fruit in rows on top of the breadcrumbs. Sprinkle with 1 cup of sugar; pour cream mixture over the top. Bake in 350 degrees oven for 45 minutes.
