You'll be pining for seconds when you taste this dessert that's made of pineapple chunks. The Ritz crackers also bring a rich taste to the table. One taste, and you'll be hooked.
At a glance
2 (20 oz.) cans pineapple chunks
1 cup sugar
1/2 cup flour
1 1/2 pkg. (tubes) Ritz Crackers
1 1/2 sticks (6 oz./3/4 cup) butter, melted
Preheat oven to 350 degrees. Grease a medium size casserole dish with butter. Drain both cans of pineapple chunks. Reserve juice from pineapples and set juice aside. Place pineapple chunks in bottom of prepared 9 x 13-inch casserole dish. In a bowl, combine sugar, flour and reserved pineapple juice. Pour over pineapple chunks in casserole dish. Crumble the crackers in a separate bowl, and pour melted butter over crackers and mix well. Spread crackers over pineapple mixture in casserole, and place in preheated 350 degree oven for 30 minutes, or until juice starts to boil.
