You say tomato, we say try this dish. Pick up a couple pounds of ripe heirloom tomatoes and prepare this tarragon-tinted salad.

Ingredients
    1/4 cup finely chopped shallots
    1 tbsp. chopped fresh tarragon
    2 tbsp. balsamic vinegar
    4 tsp. extra virgin olive oil
    2 lb. (about 6 medium) heirloom tomatoes, cut into 1/4-inch-thick slices
    1/4 tsp. salt
    1/4 tsp. freshly ground black pepper
Methods/steps
Combine first 4 ingredients in a bowl, stirring well. Arrange tomatoes on a platter. Sprinkle tomatoes evenly with salt and pepper and drizzle with shallot mixture.
