Nutty Caribbean Snapper

The nuts retain moisture and flavor in the fish and add a pleasing texture and taste. It has a great taste you'll go nuts for... so snap it up!
Ingredients
1 mango, diced
1 tbsp. cilantro, fine chop
1/4 cup Vidalia onion, rough chop
1 tsp. white wine vinegar
1 tsp. mango coulis
1 dash cilantro oil
Salt and pepper
1 filet red snapper filet
Egg wash
Ground macadamia nuts
Methods/steps
To make the chutney, combine the mango, cilantro, onion, vinegar, coulis and cilantro oil. Refrigerate, covered, until needed. Season the fish with salt and pepper; brush with egg wash on one side and coat that side with macadamia nuts. Pan sear, flipping once, until done. Serve nut side up and garnish with chutney.
