Mediterranean Risotto

Ah, the marvelous Mediterranean! Use fish stock if possible to make this seafood treat sing with flavor. Savor the flavors of the Mediterranean.
Ingredients
1 cup parboiled risotto
1/2 cup white wine
1/2 cup tomato sauce
Chicken or fish stock, if needed
1 tbsp. olive oil
1 tbsp. butter
1/2 small onion, minced
2 cloves garlic, minced
4 whole clams
4 scallops
1/2 cup squid
3 jumbo shrimp
Salt and pepper, to taste
Methods/steps
Place in pan parboiled risotto. Add wine and tomato sauce. Simmer, covered, for 20 minutes. Add fish or chicken stock, if needed. Heat olive oil and butter in sauté pan. Add onion and garlic; cook until golden brown. Add seafood and salt and pepper to taste; sauté just until done. Add seafood mixture to risotto; toss lightly and serve.
