Ingredients
    1/2 lb. (1 cup) dried navy beans 4 cups water Vegetable oil spray 1 loin pork chop, very lean 1 cup no-salt-added chili sauce or tomato sauce 3/4 cup chopped onion 2 tbsp. light molasses 1 tbsp. firmly packed brown sugar 1 1/2 tsp. dry mustard powder 1/4 tsp. garlic powder 1 cup water
Methods/steps
Place beans and water in a large saucepan over high heat. Bring to a boil and cook 2 minutes. Remove from heat and let stand 1 hour then return beans to heat and simmer 1 hour, or until beans are tender. Drain, rinse and set aside. Preheat oven to 350 degrees. Lightly spray a 1 1/2-quart casserole dish with vegetable oil spray. Place beans in prepared casserole and set aside. Brown pork chop in a small non-stick skillet over medium-high heat. Cut into small cubes and add to beans. Add remaining ingredients and mix well. Cover and bake 4 hours. If needed, add additional water during cooking.
