Ingredients
    1 c. fresh chopped broccoli (or thawed and well-drained frozen)
    1/4 c. chopped onions
    1 clove garlic, chopped
    1 tsp. light butter
    8 slices Light Velveeta cheese, cut up
    2 tbsp. flour
    2 (4 oz.) cartons Morningstar Farm Scramblers (thawed)
    1 c. skim milk
    1/4 tsp. Italian seasoning
    1/2 c. shredded carrots
Methods/steps
In a saucepan, cook onions and garlic in 1 tablespoon butter. In a bowl, toss cheese pieces with flour. Add onion mix and remaining ingredients. Pour into lightly oiled 9-inch pie plate. Bake at 350 degrees 45 minutes or until set. Refrigerate leftovers. Or microwave 11-13 minutes at 50 percent power, rotating once.
