Happy Corn Salad
Feeling corny? This southwestern salad is a breath of fresh air when you're looking for a mixture that deviates from the norm. It's the perfect way to wake up your taste buds. You haven't bean there, done that until you've tried this mouthwatering medley.
At a glance
1 (15 oz.) can of dark red kidney beans or black beans, drained, rinsed 1 (10 oz.) pkg. frozen whole kernel corn, thawed 1 medium tomato, peeled, seeded and chopped 1/4 cup sliced scallions 1 jalapeno pepper, minced 1/4 cup chili sauce 3 tbsp. vegetable oil 2 tbsp. apple cider vinegar 1 tsp. chili powder 1/2 tsp. cumin 1/4 tsp. salt 1/8 tsp. pepper Lettuce leaves
In large bowl, combine first 5 ingredients. In small bowl, combine chili sauce and remaining ingredients except lettuce; pour over vegetables and stir to coat. Chill and serve on lettuce.
