It's not breakfast. It's not lunch. But it is brunch. This recipe is perfect for that perfect mid-day meal that offers the best of both worlds in one great-tasting dish.


Great Brunch Burritos

Ingredients

For 4 people

  • 4 flour tortillas
  • 2 eggs
  • 1 large tomato
  • 8 ounce(s) ground sausage
  • 1 large potato, peeled and grated
  • 1 cup(s) grated Monterey Jack
  • 4 tablespoon(s) salsa
  • 1 dash(es) salt
  • 1 dash(es) pepper

Directions

  1. Cook sausage in a frying pan. Add potatoes, and cook until brown. Drain fat. Warm tortillas. Scramble eggs. Divide all ingredients evenly among flour tortillas. Season to taste with salsa or salt and pepper. Fold tortillas and serve immediately.
