Fried Matzoh

Fried Matzoh
The flat matzo patties are reminiscent of potato pancakes. However, they're largely made from matzo and eggs. Serve at breakfast, lunch or dinner. They even work as a snack when slathered with butter.

    • Cooking spray
    • 2 tsp. oil
    • 4 matzos
    • 4 egg whites
    • Onion powder to taste
    • 1/4 tsp. kosher salt
    • 1/8 tsp. black pepper
    Methods/steps
    1. Coat a large nonstick skillet or griddle with cooking spray and add 1/2 tsp. of the oil. Heat the skillet over medium-high heat until very hot. Meanwhile, moisten the matzo with cold water and crumble into a bowl. Add the egg whites and seasonings.
    2. Spoon half the mixture into the hot skillet or griddle as one large pancake and brown. With a wide spatula, lift the matzo and add another 1/2 tsp. of oil. Brown both sides. Repeat with remaining mixture and oil.
