Corned Beef and Cabbage

Bacon grease adds rich flavor to this simple St. Patrick's Day staple. Be sure to start early and cook your beef until tender, then serve it up with potatoes or glazed carrots.

Corned Beef and Cabbage

For 6 people

  • 1 corned beef brisket with seasoning pack
  • 1 head of cabbage, roughly chopped
  • 1 dash(es) salt
  • 1 dash(es) pepper
  • 6 teaspoon(s) bacon grease

Fill pot with water and bring to slow simmer. Add brisket and contents of seasoning pack. Boil 3 to 3 ½ (three and one-half) hours until tender. Put 1/4 cup water in a separate pot and bring to a boil. Add cabbage, bacon grease, salt and pepper. Steam until tender. Serve with boiled potatoes and brown sugar-glazed carrots if desired.

Use the leftovers to make Reuben sandwiches.
