Chicken Pasta Salad
This healthful and tasty salad is picnic-perfect and makes a fabulous summer meal served with fresh bread and a salad.
At a glance
3 chicken breasts
2 c. rotini or shell pasta
1/2 red pepper, chopped
1/2 green pepper, chopped
8-10 cherry tomatoes, halved
1/4 c. Feta cheese, crumbled (optional)
1/4 c. Caesar salad dressing (more or less to taste and to coat)
Cook pasta according to package directions; drain and cool. Cook chicken until no longer pink in middle. Chop into small pieces. Combine peppers and tomatoes in a large bowl. Add chicken, pasta and feta. Add dressing and mix well. Refrigerate and serve.
