Aunt Lucy's Famous Fruit Cake
The holidays just wouldn't be right without Fruit Cake. This recipe stands out from all the rest I've seen out there. It's so good your friends and family will ask you to make it every year!
Ingredients
3 cups all-purpose flour
1 1/2 cups packed brown sugar
1 tsp. salt
1 tsp. double-acting baking powder
1 tsp. ground cinnamon
1 tsp. ground nutmeg
1/4 tsp. ground cloves
1/2 cup orange juice
2 tbsp. molasses
4 eggs
2 bananas -- chunked
1 cup cherries
1 lb. mixed fruit candied fruit
2 cups pecans -- chopped
1 1/2 cups packed brown sugar
1 tsp. salt
1 tsp. double-acting baking powder
1 tsp. ground cinnamon
1 tsp. ground nutmeg
1/4 tsp. ground cloves
1/2 cup orange juice
2 tbsp. molasses
4 eggs
2 bananas -- chunked
1 cup cherries
1 lb. mixed fruit candied fruit
2 cups pecans -- chopped
Methods/steps
1. Mix all ingredients except dried fruit, pecans, candied fruit. Beat 3 minutes with mixer on high speed.
2. After mixing well, stir in the remaining ingredients.
3. Line 2 loaf pans with waxed paper and grease well.
4. Pour in mixture and bake at 275 degrees for 3 hours.
5. Cover with foil last hour to keep from over-browning. Remove from pan and cool completely.
