Ingredients
    3 oz. parmesan cheese
    3/4 cup mayonnaise
    1 can artichoke hearts (packed in water & salt)
    1/3 cup red pepper sauteed in olive oil
    2 egg whites
    1/3 cup chopped onion sauteed in olive oil
    Thinly sliced French bread.
Methods/steps
1. Drain artichoke, rinse and chop them thinly.
2. Combine mayonnaise, artichokes, parmesan cheese, red pepper and onion.
3. Beat egg whites until firm.
4. Fold egg whites into cheese mixture.
5. Spread mixture on bread.
6. Arrange the slices on alluminium foil.
7. Broil for few minutes; Watch carefully to prevent burning.
