Southwestern Steak: Layer a chopped onion, 3 minced cloves of garlic, and 1 1/2 pounds of flank steak. Combine one jar of chunky salsa, 1/2 tsp dried oregano, 2 tsp chili powder, 1/2 tsp salt and 1/4 tsp pepper in a small bowl. Pour mixture over steak. Top with two cans of black beans, drained and rinsed. Cook on low for 7 to 9 hours. Remove meat from slow cooker and slice or use a fork to shred. Add 1 sliced red pepper and 1 sliced yellow pepper and return meat to crockpot. Cook for 30 minutes and serve over rice.
