Potato-Nested Eggs
This is a very versatile dish that can be served as a dinner or a brunch. Kids love finding the nested eggs!

2 lbs. potatoes, cooked
1 cup milk
1 1/2 cups grated hard cheese
6 eggs
2 2/3 tbsp. margarine, melted
Sea salt
Freshly ground black pepper
Methods/steps
Preheat oven to 425 degrees. Mash potatoes with milk and margarine. Oil the sides and bottom of a 10 inch baking dish and sprinkle bottom with 1/3 of the cheese.
Add mashed potatoes and spread evenly. Make six holes in the potatoes and crack an egg into each hole. Pour a little melted margarine over each egg, then sprinkle the top with the remaining cheese and some salt and pepper. Bake for 10 minutes.
