Spinach Balls

If only Popeye had this recipe, he'd be on the ball. These bite-sized delicious spinach balls with mixed stuffing and frozen spinach are ideal for family gatherings.

Ingredients

For 14 people

  • 6 eggs, lightly beaten
  • 6 ounce(s) stuffing mix
  • 1/2 cup(s) butter or margarine, melted
  • 1 cup(s) grated Parmesan cheese
  • 1/4 teaspoon(s) salt
  • 1/8 teaspoon(s) pepper
  • 2 1/2 cup(s) frozen chopped spinach, thawed and squeezed dry

Directions

In a bowl, combine eggs, stuffing mix, butter, Parmesan cheese, salt and pepper. Add spinach; mix well. Shape into 1-1/2-in. balls; place in an ungreased 15-in. x 10-in. x 1-in. baking pan. Bake at 350 degrees for 12-15 minutes or until lightly browned.
