Cabbage Medley

Looking for a veggie side that's full of nutritional value and flavor? This delicious sauteed cabbage medley, with red peppers, eggplans, onions and garlic will be sure to please even the pickiest of eaters.


Cabbage Medley

Ingredients

For 6 people

  • 1 small cabbage, minced
  • 2 medium eggplants, cubed
  • 2 large red peppers, sliced into little strips
  • 4 tablespoon(s) extra virgin olive oil
  • 1 large sweet onion
  • 1 sliced garlic
  • 1 dash(es) salt, to taste
  • 1 dash(es) black pepper
  • 1 bean sprouts (optional)

Directions

1. Heat the extra-virgin olive oil in a large deep skillet on medium heat. 2. Add onions, peppers and sauté until soft. 3. Add eggplant and cook on medium for 5 minutes. 4. Add the chopped cabbage gradually. The cabbage will cook down and open space up for more. 5. Add seasoning to taste and stir until all cabbage is cooked down, After about 20-25 minutes the mixture should be soft.
It is more important for the mixture to be soft and the way you want it than completing the full 25 minutes. So finish it when you are satisfied with it the results.
