Hot dogs in Beer with Sauerkraut Relish

Ingredients

For 3 people

  • 6 hot dogs
  • 3 12-oz. cans of beer
  • 6 soft French sandwich rolls or hot dog buns, split and toasted
  • 6 teaspoon(s) various mustards
  • 3 tablespoon(s) vinegar
  • 3 teaspoon(s) sugar
  • 1 teaspoon(s) pickling spice
  • 1 teaspoon(s) caraway seed
  • 1 cup(s) sauerkraut, rinsed and drained
  • 1/4 cup(s) finely chopped sweet red pepper

Directions

  1. Prick several holes in the skin of the hot dogs. In a large pot combine hot dogs and beer and bring to a boil. Reduce the heat and simmer, covered for about 20 minutes or until no longer pink. Drain. Grill hot dogs over medium heat for 7 to 8 minutes or until skins are golden, turning frequently. Serve on buns with mustards and sauerkraut relish. For relish: Combine vinegar and sugar. Cook and stir until sugar is dissolved. Stir in pickling spice and caraway. Stir in sauerkraut and pepper. Cover and chill until serving time. Serve with hot dogs.
