Beet Recipe: Oven Roasted Root Vegetable Medley
1 lb. beets, peeled and cubed
1 lb. turnips, peeled and cubed
1 lb. red-skinned potatoes, quartered
1 lb. carrots, sliced into 1" coins
1 onion, cut into 1" pieces
1/4 cup olive oil
1-3 cloves of garlic (to taste)
2 tsp. fresh rosemary, chopped
Salt and fresh-ground black pepper to taste

Preheat oven to 400 degrees. Add all ingredients to a large bowl and toss gently to coat. Transfer to a roasting pan or casserole dish and roast 30-45 minutes until lightly browned, turning halfway through cooking time.
