Pumpkin seeds are a popular fall treat, and those too are loaded with nutrition. When you're scraping out that jack-'o-lantern-to-be, rinse the seeds and set aside to dry. Spray a little olive oil or butter-flavored spray on a baking sheet and spread the seeds around. Sprinkle with a little salt or your favorite salt-free seasoning, and bake in a preheated 325 oven for 25 minutes, stirring constantly.
